What if I told you that there's something you haven't done with a potato yet? Something delicious and cheesy, but new and soul-warming? Intrigued yet?
I present to you the deceptively humble-looking potato haystack. They aren't much to look at, but they also aren't that hard to make. And they make a delicious side dish! All you need are:
- 4 Russet potatoes, peeled
- 1.5 Tbls. extra virgin olive oil
- 1/3 cup grated parmesan cheese
- 1.5 tsps. dried thyme
- cracked sea salt and cracked black pepper (optional, to taste)
Preheat the oven to 400 degrees. Line your baking sheet with parchment paper. Using your vegetable peeler, start peeling the potato itself into strips. Toss in a bowl with the remaining ingredients. Make 6-8 haystack piles with your strips on the parchment paper and bake for 20-30 minutes (they should be golden and cooked through). I start checking mine at 23 minutes.
And there you have it! Warm, cheesy, seasoned, happiness. Perfect as a side to meatloaf, steak, or by itself (as I've eaten them many times). Enjoy!
