I love this pie. I love it with a weird little passion that makes me fix it when it is not seasonally appropriate. After one bite, you might do the same! Ok, I'll come right out and say it: this is not the most impressive-looking pie you've ever seen. Heck, it might not be the most impressive-looking pie you've ever seen on this blog. But trust me when I tell you that looks are deceiving. This is the pie that wins all the holiday potlucks both for you and for everyone eating it.
You will need:
- Milk (follow the package directions for how much milk for a pie)
- Instant Pudding Mix (either one 5.9 oz or two 3.5 oz)
- 17 peppermints (weirdly obsessive, I know)
- 1 graham cracker crust
I also heartily recommend a stand or hand mixer and a blender.
Whisk your pudding mix into the cold milk. Now grind up your unwrapped peppermints. I find the ice crushing mode is best! You want a powder. Like this:
Dump in the peppermint powder (just like I clearly did) and mix it into the pudding. Now scrape all the deliciousness into the graham cracker crust and let it set anywhere from two hours to overnight. I personally like to fix it the night before a work potluck!
